Ingredients

  • 1 lb ground beef (80% lean)
  • 2 tablespoons coconut oil
  • 1/2 cup sliced bell peppers
  • 1/2 cup broccoli florets
  • 1/4 cup soy sauce (or tamari)
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • Salt and pepper to taste

Instructions

  1. Heat coconut oil in a large skillet or wok over medium-high heat.
  2. Add ground beef and cook 6–8 minutes, breaking it up, until browned and cooked through.
  3. Add bell peppers and broccoli and stir-fry 2–3 minutes, until crisp-tender.
  4. Add garlic and ginger and cook 30–45 seconds, just until fragrant.
  5. Pour in soy sauce and sesame oil. Toss 1–2 minutes until the sauce coats the beef and vegetables.
  6. Taste, adjust salt and pepper, and serve hot.
