Ingredients
- 1 lb ground beef (80% lean)
- 2 tablespoons coconut oil
- 1/2 cup sliced bell peppers
- 1/2 cup broccoli florets
- 1/4 cup soy sauce (or tamari)
- 1 tablespoon sesame oil
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- Salt and pepper to taste
Instructions
- Heat coconut oil in a large skillet or wok over medium-high heat.
- Add ground beef and cook 6–8 minutes, breaking it up, until browned and cooked through.
- Add bell peppers and broccoli and stir-fry 2–3 minutes, until crisp-tender.
- Add garlic and ginger and cook 30–45 seconds, just until fragrant.
- Pour in soy sauce and sesame oil. Toss 1–2 minutes until the sauce coats the beef and vegetables.
- Taste, adjust salt and pepper, and serve hot.
