Ingredients

  • 1 lb ground beef (85/15 lean)
  • 2 medium sweet potatoes, peeled and diced
  • 1/2 cup chopped red onion
  • 1/2 cup chopped bell peppers (any color)
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced sweet potatoes and cook 8–10 minutes, stirring often, until they start to soften and brown.
  2. Add red onion and bell peppers. Cook 3–4 minutes more, until the vegetables soften.
  3. Push the vegetables to one side and add the ground beef. Cook 6–8 minutes, breaking it up, until browned and cooked through.
  4. Stir in smoked paprika, garlic powder, cumin, salt, and pepper. Mix everything together so the seasoning coats the beef and sweet potatoes.
  5. Cover the skillet and cook 3–5 minutes more on medium-low, until the sweet potatoes are fork-tender.
  6. Taste, adjust seasoning, and finish with parsley.
