- 1 lb ground beef (85/15 lean)
- 2 medium sweet potatoes, peeled and diced
- 1/2 cup chopped red onion
- 1/2 cup chopped bell peppers (any color)
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add diced sweet potatoes and cook 8–10 minutes, stirring often, until they start to soften and brown.
- Add red onion and bell peppers. Cook 3–4 minutes more, until the vegetables soften.
- Push the vegetables to one side and add the ground beef. Cook 6–8 minutes, breaking it up, until browned and cooked through.
- Stir in smoked paprika, garlic powder, cumin, salt, and pepper. Mix everything together so the seasoning coats the beef and sweet potatoes.
- Cover the skillet and cook 3–5 minutes more on medium-low, until the sweet potatoes are fork-tender.
- Taste, adjust seasoning, and finish with parsley.
