Ingredients
- 1 lb ground beef (85/15)
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 8 large lettuce leaves
- 1/2 cup diced tomatoes
- 1/4 cup shredded cheddar cheese (optional)
- 1/4 cup sour cream
- Fresh cilantro for garnish (optional)
Instructions
- Wash and dry the lettuce leaves well so they can hold the filling without wilting.
- Heat olive oil in a skillet over medium heat. Add onion and cook 2–3 minutes until softened.
- Add garlic and cook 30 seconds, then add ground beef. Cook 6–8 minutes, breaking it up, until browned and cooked through.
- Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook 1–2 minutes more so the spices bloom into the beef.
- Spoon the beef mixture into lettuce leaves and top with tomatoes and any preferred low-carb toppings.
- Serve immediately while the lettuce is crisp.
