Ingredients
- 2 pork chops (~350g total)
- 2 tablespoons olive oil
- 1/2 cup almond flour
- 1 tablespoon dried mixed herbs
- 1 teaspoon garlic powder
- 1 medium cauliflower (~600g), cut into florets
- 1/4 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Bring a pot of salted water to a boil. Add cauliflower florets and cook 10–12 minutes, until very tender. Drain well.
- Mash cauliflower with heavy cream, butter, salt, and pepper until smooth. Keep warm.
- Pat pork chops dry. Mix almond flour, dried herbs, garlic powder, salt, and pepper on a plate, then press the mixture onto both sides of the chops.
- Heat olive oil in a skillet over medium heat. Cook pork chops 4–6 minutes per side, depending on thickness, until golden and the center reaches 145°F. Rest 3 minutes.
- Serve pork chops over cauliflower mash.
