Ingredients

  • 2 pork chops (~350g total)
  • 2 tablespoons olive oil
  • 1/2 cup almond flour
  • 1 tablespoon dried mixed herbs
  • 1 teaspoon garlic powder
  • 1 medium cauliflower (~600g), cut into florets
  • 1/4 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Bring a pot of salted water to a boil. Add cauliflower florets and cook 10–12 minutes, until very tender. Drain well.
  2. Mash cauliflower with heavy cream, butter, salt, and pepper until smooth. Keep warm.
  3. Pat pork chops dry. Mix almond flour, dried herbs, garlic powder, salt, and pepper on a plate, then press the mixture onto both sides of the chops.
  4. Heat olive oil in a skillet over medium heat. Cook pork chops 4–6 minutes per side, depending on thickness, until golden and the center reaches 145°F. Rest 3 minutes.
  5. Serve pork chops over cauliflower mash.
