Ingredients
- 1 1/2 cups sharp cheddar cheese, shredded
- 1/2 cup crushed pecans
- 1 tablespoon jalapeño, finely chopped
- 1/4 cup coconut flour
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 egg yolk
- 2 tablespoons butter, melted
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- Mix cheddar, crushed pecans, jalapeño, coconut flour, garlic powder, and salt in a bowl.
- Add egg yolk and melted butter. Stir until the dough holds together. If it is crumbly, press it together with your hands.
- Roll or press the dough between two sheets of parchment to about 1/8–1/4 inch thick, then cut into cracker squares.
- Bake for 10–13 minutes, until the edges are browned and the centers are firm.
- Cool completely on the pan so the crackers crisp up.
