Ingredients

  • 1/2 cup heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon powdered erythritol (or your preferred keto-friendly sweetener)
  • 1/4 cup mixed low-carb berries (such as raspberries, blackberries, or strawberries)
  • 1 tablespoon crushed low-carb granola (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Add heavy whipping cream, vanilla, and powdered erythritol to a cold mixing bowl.

  4. Add crushed low-carb granola if using for crunch.
  5. Garnish with mint and chill until serving, or serve right away.
